What is baghali polo?
Baghali polo means "fava bean rice" — aged basmati layered with fresh dill and tender fava beans, steamed slowly until each grain stands separate and aromatic. The crispy golden bottom layer (tahdig) is the dish's signature.
What makes the lamb shank special
Our lamb shank is braised for hours in onions, turmeric, saffron, and tomato until the meat falls off the bone with the touch of a fork. The braising liquid is then reduced into a rich, deeply savoury sauce that's spooned over the rice. The combination of fragrant herb-rice and fall-apart lamb is one of those things you have to taste to understand.
